    • 1 cup yogurt
    • 1 tsp ginger-garlic paste
    • 1 tsp turmeric powder
    • 1 tsp red chilli powder
    • 1 tsp garam masala
    • 1 tsp salt
    • Juice of 1 lemon

    For the Butter Chicken Masala:

    • 2 tbsp butter
    • 1 tbsp oil
    • 2 medium onions (finely chopped)
    • 3 medium tomatoes (pureed)
    • 1 tsp ginger-garlic paste
    • 1 tsp cumin seeds
    • 1 tsp coriander powder
    • 1 tsp turmeric powder
    • 1 tsp Kashmiri red chili powder (for color)
    • 1 cup heavy cream
    • 1 tsp honey (optional)
    • 1 tsp garam masala
    • 1/2 cup water
    • Fresh coriander leaves (for garnish)

    Instructions:

    Step 1: Marinate the Chicken

    1. In a bowl, mix yogurt, ginger-garlic paste, lemon juice, and spices for the marinade.
    2. Add the chicken pieces and coat well.
    3. Cover and refrigerate for at least 1 hour (preferably overnight).

    Step 2: Cook the Chicken

    1. Heat a grill pan or skillet and cook the marinated chicken until slightly charred and cooked through. Set aside.

    Step 3: Prepare the Masala

    1. Heat butter and oil in a pan over medium heat.
    2. Add cumin seeds and let them sizzle for a few seconds.
    3. Add onions and sauté until golden brown.
    4. Stir in the ginger-garlic paste and cook until fragrant.
    5. Add tomato puree, turmeric powder, red chili powder, and coriander powder. Cook until the oil separates.
    6. Add the cooked chicken, mix well, and let it simmer for 5 minutes.

Step 4: Add the Creamy Touch

    1. Reduce heat and stir in heavy cream. Mix until the gravy is smooth and creamy.
    2. Add garam masala and honey (if using). Adjust salt to taste.

    Step 5: Final Touch

    1. Garnish with fresh coriander leaves.
    2. Serve hot with naan or basmati rice.

Extra Tips for the Perfect Butter Chicken:

    1. For Extra Creaminess: Add a dollop of butter while simmering the gravy.
    2. Smoky Flavor: Char the chicken on a grill for authentic smoky notes.
    3. Balance Flavors: Adjust cream and honey to balance the spice and tang.
