Idli rice is specifically designed for making the batter used in South Indian idlis and dosas. Idlis are soft, fluffy steamed rice-lentil cakes that form a staple part of the diet in states such as Tamil Nadu and Kerala. These idlis can be served as is, accompanied by sambhar and chutneys. Alternatively, they can be shallow fried in oil with seasoning and molagappodi powder (chutney powder). Another variation involves mixing idlis with curd, seasoning them with curry leaves, mustard, and chillies, and serving the dish cold.
